Cheese Manicotti

Excellent!

 

8          ounces cooked & cooled * Manicotti Noodles

 

2          cups shredded mozzarella cheese

 

1          24 oz cottage cheese or Ricotta Cheese

 

1/2       cup dry bread crumbs

 

1/2       cup Parmesan cheese (fresh grated preferably)

 

2          tablespoons oregano     (fresh or dried)

 

2          tablespoons basil          (fresh or dried)

 

1          teaspoon sugar

 

1/2       teaspoon salt

 

1/2       teaspoon pepper

 

2          eggs

 

1          Marinara Sauce (See Recipe Below), or substitute a premade spaghetti sauce

Manicotti

 

MIX:    all ingredients except noodles, 1/2 of parmesan cheese and marinara sauce. 

FILL:   manicotti sleeves with mixture and lay flat in a baking dish 

POUR: Marinara sauce over noodles then sprinkle with remaining parmesan cheese and parsley. 

BAKE: at 350 degrees for 40-45 minutes.

 

 

Marinara Sauce

 

2 tablespoons olive oil or corn oil

 2 cloves garlic, minced

 1 small onion, chopped

 1) 16 ounce can tomatoes, coarsley chopped

 1) 6 ounce can tomato paste

 1 tablespoon sugar

 2 teaspoons basil

 1 1/2 teaspoons salt

 

 In medium pan over medium heat, in hot oil, cook garlic and onion until

 tender, about 5 minutes. Stir in tomatoes and their liquid, tomato paste,

 sugar, basil and salt. Reduce heat to low and simmer covered for about 20

 minutes or until thickened.
