Chinese BBQ Spareribs

Best ribs this boy has ever cooked up!

Don’t be scared these are way easy!

                -----THE MEAT-----

3              pounds spareribs

                -----MARINADE-----

4              teaspoons sugar

1 1/4        teaspoons salt

3              cloves minced garlic

1              teaspoon powdered ginger

1              tablespoon soy sauce

4              tablespoons  * Wine

1              teaspoon  * Five Spice Powder  (found at oriental market)

2              tablespoons  hoisin sauce  (found at oriental market)

4              tablespoons catsup

                -----SAUCE-----

1/4           cup hoisin sauce (found at oriental market)

1/4           cup honey

6              drops food color, red food coloring ( optional )

                -----OTHER STUFF-----

 1/4           pound wood chips, soaked in water 1 hour

 TRIM:  fat and thin edges from ribs. Leave rack intact. MARINATE:  at least 1 hr. 

TO SMOKE: Soak hickory chips ( or other hardwood of your choice ) in water for an hour. Start smoker and add wood chips. When coals are white all over put the water pan in the smoker half full of water. Put the  ribs in the  smoker and cook appx. 45 minutes per pound.   The last hour or so of cooking baste the ribs with 1/4 cup honey and 1/4 cup hoisin sauce mixture.

TO BAKE:  Preaheat  oven to 375 degrees. Cook  25 to 30 minutes then turn and bake another 10 to 12 minutes.  Switch oven to broil. COMBINE:  honey and hoisin sauce. Baste both sides of ribs. Broil  4 to 5 inches from flame for 1 minute on each side.
