Saucy Chicken Crepes

            Basic Crepes

 

3          eggs

 

3/4       cup milk

 

1/4       cup melted butter or margarine

 

3/4       cup sifted flour

 

1/4       teaspoon salt

 

            Chicken Filling

 

1/2       cup chopped * Green Onion

 

1/4       cup butter or margarine

 

1          4 oz. can  * Mushroom Pieces

 

1/4       cup chopped ripe olives

 

2 1/2    cups cooked and chopped * Chicken

 

1          cup sour cream

 

1          * 10 3/4 oz condensed Cream of Chicken

 

1          cup shredded cheddar cheese

 

 

                               CREPE RECIPE    Combine all crepe ingredients and whirl in a blender for 45 seconds. Cover and refrigerate for at least 1 hour. If too thick add more milk. Mixture should be the consistency of cream. Heat a lightly greased 6 inch skillet. Remove from heat and spoon in about 2 tablespoons of the batter. Lift and tilt skillet to spread batter evenly. Return to heat and brown one side only. To remove invert the skillet over a paper towel. Repeat with remaining batter.                               Chicken Filling    Preheat oven to 350 degrees. in a large skillet melt butter and saute onion until tender. Add mushrooms and olives, cook 3 minutes. Stir in chicken, salt and pepper (dash) and heat through. In a small saucepan combine sour cream and soup heating just til bubbling. Stir 1 cup of sauce into the chicken reserving remaining sauce for topping. Top each crepe with a heaping 1/4 cup ofthe chicken mixture. Roll up and place seam side down in an ungreased jelly roll pan. Spread remaining sauce over crepes.    Bake at 350 degrees for 30 minutes.
