Sausage Stuffed Zucchini

1/2       pound casing removed sweet Italian sausage

 

1/2       pound  * Ground Beef

 

1          chopped onion

 

1          * rib chopped celery

 

1/3       cup plain,dry bread crumbs

 

1          egg

 

1          tablespoon chopped,fresh parsley

 

1/4       teaspoon pepper

 

4          * large halved,seeded zucchini

 

1          * 8 oz tomato sauce

 

 

  Preheat oven to 375 degrees. In a skillet over medium heat cook the sausage and beef until browned and cooked through. Drain the cooked beef and sausage reserving 1 Tbsp. of the drippings. Transfer meat to a large bowl. In the same skillet heat the drippings. Add onion and celery; cook 2-3 minutes. Transfer this also to the bowl with the meat. Stir in the bread crumbs, egg, parsley, and pepper until well combined. Place zucchini on a baking sheet; fill evenly with the meat mixture. Spoon tomato sauce over the zucchini and cover with foil. Bake until the zucchini is tender and the filling is heated through. Approximatley 30 minutes.
